Random Ingredients for a Quick Easy Meal

I’ve been feeling more confident in my cooking skills. My confidence came from  practice, but also from a little pep talk from some friends. I was always worried about cooking for other people because I didn’t think my food would be good enough. Well after my pep talk, I realized that it didn’t matter what other people thought. I would cook whatever I thought sounded good and that’s all that mattered.

Since then I’ve been experimenting a little bit more. More like throwing random things together and calling it a meal. For the most part I’ve been pretty pleased with the results.

One meal that I was really pleased with happened on a whim. I was in a rush and needed something quick. I had some leftover pasta but no sauce and wanted to dress it up a little bit.

After perusing the fridge I discovered I had spinach, tomatoes, vanilla yogurt, brie and parmesan cheese. These items seem a little random, but together they made for a great dish.

I sauteed the spinach and tomatoes then added in the vanilla yogurt, brie and parmesan to create a nice sauce. To add a little more flavor I added black pepper and cayenne pepper. Then I just poured this over the pasta I had. This was super easy and quick to make and just what I needed.

Another quick meal I made happened because I needed something healthy for lunch. I’m new to watching what I eat and had gotten healthy foods, but didn’t have a plan on how to put them together. Well, I ended up sauteing some kale and adding black beans, corn and some tuna. Super easy, delicious and very healthy!


It’s important to trust your instincts and try new things. It will probably turn out better than expected and even if it doesn’t turn out great, you tried and learned something.
